Our Salsa
Salsa Roja is from the State of Guerrero in Southwest Mexico. This is where Javier's mom is from. She grew up on a self-sustaining farm, they grew everything they ate. They had cows, pigs, chickens, and goats and made Queso Zincho, a dry cheese. The salsa roja was usually made by Javier's mother and she will use it to serve with eggs with, chicken, pork sausage, or sautee vegetables in it.
Salsa Verde is a typical salsa from the city, where Javier was born, of Cuernavaca Morelos, by Mexico City. This salsa is usually put on pastor pork tacos and tortas (Mexican sandwiches). Javier was inspired to make his own version of this traditional salsa by roasting the jalapenos and adding habaneros to it.
